The largest island in the Mediterranean was invaded and occupied by the Greeks, Romans, Arabs, Normans and Spaniards, who all left their mark on Sicilian identity, culture, art, architecture and, most importantly, Sicilian food.\u00a0<\/p>\n\n\n\n<p>Sicilian pizza has an international following, however, Sicilian cuisine is more than <em>lo sfincione<\/em>. Also known as \u201cThe Most Conquered City in History,\u201d Palermo boasts a host of traditions that are reflected in its art and architecture. Credit: Shutterstock<\/figcaption><\/figure>\n<\/figure>\n\n\n\n<p>But the true masterpiece of Sicilian street food is <em>l&#8217;arancina<\/em>. This deep-fried saffron rice ball stuffed with minced meat and peas is immensely satisfying. Modern cooks still follow the centuries-old recipe, which comes from the Arabs and the Normans. The former brought risotto with saffron to the island and the latter were the ones to shape the rice into small \u201corange\u201d balls.&nbsp;<\/p>\n\n\n\n<p>The secret of perfect arancini? Grains of rice need to be separated <em>al dente<\/em> (you have to feel all of them when you bite down)! While exploring the city, don\u2019t forget to look up: the famous red domes of Palermo\u2014San Cataldo and San Giovanni degli Eremiti\u2014stand out against the blue sky and, in shape and colour, are reminiscent of arancini!<\/p>\n\n\n\n<p><br>From Palermo move to <a href=\"https:\/\/www.omio.co.uk\/travel\/trapani?utm_source=omio-magazine&amp;utm_medium=magazine&amp;utm_campaign=April&amp;utm_content=SicilianFood&amp;utm_term=UK_Trapani\" target=\"_blank\" rel=\"noreferrer noopener\">Trapani<\/a>, on the west coast. The \u201cCity Between Two Seas\u201d (the Mediterranean and the Tyrrhenian), Trapani has an elegant old centre of Arab origin. From its port, you can reach the magnificent archipelago of the Egadi islands. Credit: Shutterstock<\/figcaption><\/figure>\n<\/figure>\n\n\n\n<p>The Arabs brought couscous to Sicily but this recipe reflects the Sicilians\u2019 love of the sea and its bounty. The semolina is first prepared and mixed in a <em>mafaradda<\/em> (traditional ceramic pot). The grains are shelled patiently so as not to be sticky or gummy. The couscous is draped in a fish broth made from local varieties: snapper, sea bream, tub gurnard, scorpionfish, cod, mullet, crustaceans and molluscs. The result? A deeply savoury dish that will make you feel one with the sea around you.&nbsp;<\/p>\n\n\n\n<p>But Sicily is not only about the sea. The Sicilian hinterland is less known but equally full of ancient flavours and customs.&nbsp;<br><\/p>\n\n\n\n<p>Head to Caltanissetta, in the interior, where <em>ilcannolo siciliano,<\/em> one of the best-loved Italian desserts was allegedly invented. Legend has it that local nuns modified an ancient Muslim recipe, once made by harem concubines for the local sultan. The deep-fried crispy pastry shell is filled with soft ricotta cheese, chocolate chips and a small strip of candied orange. Credit: Valentina Locatelli\/Unsplash<\/figcaption><\/figure>\n<\/figure>\n\n\n\n<p>Ricotta is also the basis of <em>cassata<\/em>, the queen of Sicilian pastries. The Greeks brought ricotta and the Arabs the <em>quas\u2019at<\/em>, a big round pan in which cassata is made. When the Spaniards colonised Sicily, they made the cake, which includes candied fruit, more elaborate, decorating it in a Baroque style, just as they did with the local architecture.<\/p>\n\n\n\n<p>Burn those newly acquired calories with a visit to the<em> <\/em>Castello di Pietrarossa. It\u2019s in a state of disrepair but is still one of the most important castles in Sicily thanks to its hilltop location, which offers a spectacular view of the surrounding countryside. The elongated shape and pitted stone of the tower recall the shape of a <em>cannolo<\/em>, with its typical bubbles in the shell (created by the addition of vinegar to the dough).<\/p>\n\n\n\n<p><br>Take a trip to the east coast and specifically, <a href=\"https:\/\/www.omio.co.uk\/travel\/catania?utm_source=omio-magazine&amp;utm_medium=magazine&amp;utm_campaign=April&amp;utm_content=SicilianFood&amp;utm_term=UK_Catania\" target=\"_blank\" rel=\"noreferrer noopener\">Catania<\/a>, which sits at the foot of Mt. Etna. The theatre is forever linked to local composer Vincenzo Bellini who himself is eternally connected to the most popular Sicilian pasta: <em>Pasta alla Norma<\/em>.&nbsp;<\/p>\n\n\n\n<p>The theatre opened in 1890 with Bellini\u2019s <em>Norma<\/em>, and, according to legend, a Sicilian chef created a dish to honour the occasion, possibly taking inspiration from soprano Giuditta Pasta, who was the tragic lead in the opera.<\/p>\n\n\n\n<p><br><em>Pasta alla Norma<\/em> is a cornerstone of Sicilian cuisine. Only a few ingredients are needed: fresh basil, garlic, vine-ripened tomatoes, golden, fried eggplant and grated salty ricotta cheese. Here, culinary tradition is best expressed in Sicilian marzipan.<\/p>\n\n\n\n<p>Made from sugar and fresh almonds, marzipan is a Sicilian dessert as an art form. Through a time-consuming process, the marzipan is crafted, shaped and painted into small edible sculptures of fruits and vegetables.
